Japanese Sweet Potato and Rice

sweet potato and rice

When I worked at a local Japanese junior high school, the kids and teachers all ate the same school lunch. Sweet potatoes and rice (Imo-gohan in Japanese) was a semi-regular mixed rice dish they used to serve. Coming from Scotland, I’m always happy to eat potatoes, so I really enjoyed this dish on days I was feeling a little bit homesick! Rice Chili Stew

two bowls of rice chili stew topped with avocado

I’ve been playing around with this recipe for the last couple of weeks and am finally happy with this version that I’m posting. It was fun learning lots of different ways not to make it. For instance, don’t use too many tomatoes; make sure to add enough beans; don’t cook the rice for too long; cook the ‘sauce’ for longer than the ‘meat’. Spicy Beans, Corn and Rice

all in one donabe recipe

Also, I didn't use any oil, to keep things low fat. Then again, it tastes amazing with a mashed avocado with lemon juice, on top! This brings the calories from fat up to nearly 30%, so I don't eat this every day. Read more »

I re-hydrated a huge batch of black beans the other day for some bean burgers and still had plenty left over. This all-in-one rice cooker recipe is super quick to prepare and tastes pretty damn fine! I based the recipe on my buddy Tom's bean burrito chili. Read more »
