This is another recipe that works well in a donabe. It’s as if using a donabe gives dishes a burnt kind of vibe. I realize that might not sound too attractive. The way Induction Heating rice cookers are designed is so that the rice doesn’t burn nor stick to the cooking bowl. Under most circumstances, this is exactly what you want from a rice cooker, but sometimes not. In this case, the character of the donabe definitely adds something to the dish.

Middle Eastern comfort food with a Japanese twist
  • ½ cup of rice (75g)
  • ½ cup of lentils (brown, green or puy) (74g)
  • ½ an Onion (50g)
  • Ginger (5g)
  • Cumin, Cayenne, Garlic Granules, Black Pepper
  • Reduced Salt Vegan Bouillon powder (1 teaspoon)
  • ½ a lemon
  • 220 ml water
  1. Wash the rice (see how to wash rice for Donabe cooking). Then add the lentils.
  2. Pour in the water.
  3. Finely chop the onion and ginger, then add to rice cooking bowl.
  4. Next add the spices. I like a lot of cumin, and a just a little cayenne, garlic and black pepper.
  5. Squeeze the juice from ¼ of a lemon and pour into the cooking bowl. Add the juice from the other ¼ once the dish has cooked.
  6. Add a teaspoon of vegan stock.
  7. Make sure the exterior of the cooking bowl is dry, put it back into your rice cooker and close the lid. Then select the 'white rice' option and press start.
Donabe Cooking
  1. Put the lid on and cook on a medium/high heat until the water starts to boil.
  2. Check regularly because it will boil over if we're not careful!
  3. As soon as the water begins to boil, reduce to a low heat for 13 minutes.
  4. When you're ready to eat, pour in the remaining lemon juice, stir, and eat.
